What the Food Hygiene Rating Actually Means
Every restaurant, café, and takeaway in England is inspected by local authority food safety officers under the Food Hygiene Rating Scheme (FHRS), and given a score from 0 to 5. The rating reflects three things: how hygienically the food is handled, the physical condition of the premises and facilities, and how well management systems are in place to keep standards consistent — not just on inspection day, but every day.
A 5 rating — the top score — means hygiene standards are very good across all three of those areas. It’s a genuinely earned rating, based on an unannounced inspection of the actual kitchen, not a self-assessment.
Our Standards Across Bristol
Food hygiene isn’t something we apply differently site to site — the same standards run across our Cotham Hill, North Street, and Gloucester Road locations. Each kitchen is inspected independently by Bristol City Council’s food safety team, and each has been assessed as maintaining genuinely high hygiene standards — not a shared reputation borrowed from one site, but three kitchens independently held to the same bar.
What This Looks Like in Practice
A strong hygiene rating isn’t down to a single factor — it comes from consistent practice across everything a kitchen does:
Temperature control. Every ingredient, from raw meat and seafood to prepared sauces, is stored, cooked, and held at the correct temperature throughout its journey through the kitchen — not just checked once at delivery.
Cross-contamination prevention. Separate preparation areas, equipment, and storage for raw and cooked ingredients, alongside strict allergen handling procedures — particularly important in a kitchen working with the range of ingredients that goes into authentic Thai cooking, from shellfish to peanuts to shared woks.
Staff training. Every member of the kitchen team is trained in food safety practice, not just senior chefs — hygiene standards only hold up when everyone handling food understands why the procedures exist, not just what they are.
Cleaning and maintenance schedules. Structured, documented cleaning routines rather than ad-hoc tidying, covering everything from prep surfaces and equipment to storage areas that aren’t always visible to diners.
Pest control and premises condition. Regular pest control checks and proper maintenance of the physical kitchen environment — inspectors look closely at this, and it’s an area that’s easy to neglect if it isn’t actively managed.
